Organic food purchases are steadily increasing, and organic food sales represent over 4% of total food sales in the U.S. By all counts, organic is now "mainstream". However, consumer confusion regarding the term “organic” remains strong. This is partly due to the multiple uses and definitions of this term globally, but also lack of agricultural literacy.
